People like to think that hops just bitter our beer... thats not even the half of it.Our hops add all kinds of amazing qualities to our Beer. Not just bettering but everything from fruity to citrusy to even grassy flavours. Changing the quantities and the time that we add them can completely change the flavour of our beers.
Two days after we get our DA the council throws us a curve ball. Yes it was approved but State Water is going to require a treatment plant. After 4 or 5 months of going over this they realise two days after issuing the DA that it might be required.
We have had a pretty busy few months stripping the brewery and starting to prep for the arrival of our new equipment. The plan had always been to be trading by December to cash in on the Christmas/summer trade.
June came quickly it was time to take the next big step. We had saved a little money and it was time to order our equipment and apply for our DA from council. We found a local supplier that was ordering cheap ( in every sense of the word), equipment from China.
After what seemed like a lifetime, a couple of months had passed and it was time to take the next big step. Simon offered me a job with him and Penny so we could use our quiet time to make headway on the brewery. So it was goodbye to Visy and hello to the next step.
Seems that it's usually best to start at the beginning when starting something so lets do that :-). Brewery D-day for us was March 2013, that was the day that Simon and I realised that this obsession would never be over until we saw it through. We had recently been on a ride and came across Dalgety (Berridale) brewery.
