The Profile
Pilsner is a pale lager and a famous style of beer that has been replicated the world over, although often not to great effect. A true pilsner, from the Czech Republic or Germany, has a medium to full body, is a light golden yellow in colour, has high carbonation and floral hops which give the beer a crisp yet bitter finish. It is most important for a pilsner to be refreshing yet delicate. It should also have a dense fluffy head.
One of the most important aspects of a true pilsner is the soft water used to make it. This is one of the reasons why pilsner still has such a strong link with its hometown of Pilsen; because it’s very hard to recreate the quality of the water found there.

The flavour of coffee, like wine, is affected by the soil, altitude and climate that it is grown in. Also, like wines grapes, the variety of bean used to brew coffees also contribute a lot to the flavours of your cup. Where coffee and wine differ here is that there are thousands of varieties of wine grapes and many different varieties have dedicated followings. With coffee, however, we don’t have this variation in the beans and you might be surprised to hear that there are only two types of beans that we use to produce most the worlds third most popular beverage; arabica and robusta. We are not saying these are the only varieties of coffee bean but they are the only ones used to produce coffee.

Porters are beers made with brown malts, creating a deep, dark coloured ale. These malts give off richer flavours of coffee, chocolate, dark fruits and caramel, often with some vanilla and toffee swilling around in the glass too. Hops? Not too prominent a flavour here, mainly used just for bittering, and any hop flavour there is will complement the flavours of the malts.

Our fourth and newest single origin, Blue Batak, is still warm from its roasting so -being high on the fumes of freshly roasted coffee- we thought we’d take a minute to tell you about it. It won’t be available until the 5th of August, but we’re so excited about its uniqueness that we wanted to spill the bean; pun intended ;)

As people have with beer, as people have with everything, they do with coffee. Exclusive, strange and just goddam weird is what we’ll call some of the coffee’s that we’ve found on the internet. They may not all be beans but they’re definitely all meant for drinking, and for the good humour so you can laugh and contort your face along with us we thought we’d share them with you. What do baristas think about in their downtime? We think some of these square pegs may fit into that round hole.
